Homemade carnitas & flour tortillas

Pork roast, cut into large chunks
Olive oil
Salt & pepper
Onion & garlic
1 1/4 cup chicken broth
Juice of 2 oranges & some zest
1 tsp chili powder
1 tsp cumin
1/2 tsp paprika
1/4 tsp coriander
1/4 tsp cayenne
2 Tbs oregano (fresh)
Dash cinnamon
Mix spices together then coat pork pieces in the rub before browning in olive oil.
Brown pork really good, remove from Dutch oven and set aside. Add chicken broth and orange juice and whisk until boiling and brown bits are incorporated into broth. Add onion, garlic and meat. Put in 325 degree oven uncovered for 2 hours, then covered for up to 1 hour. Shred and eat!!


Flour tortillas
2 cups all purpose flour
1/2 cup masa harina
2 1/2 tsp baking powder
1 tsp salt
1/2 cup shortening
2 Tbs salted butter
1 cup very hot water
Cut shortening and butter into dry ingredients, then add water slowly while mixing. Knead a few times (might need to add flour) let sit for about a hour in bowl covered with damp towel. Pinch small amount and roll into ball, roll out into tortillas with rolling pin. Cook on skillet flipping until cooked (couple minutes total).
